2 cups soaked chickpeas
2 tablespoons clarified butter
1 tablespoon tea leaves
2 whole black cardamom
1 teaspoon black peppercorns
4 whole cloves
1 teaspoon salt
2 cups spinach leaves
1 large onion
2 medium tomatoes
2 dry red chillies
1 bay leaf
1 cinnamon stick
1 tablespoon cumin seeds
1 tablespoon coriander powder
1 tablespoon degi red chilli powder
1 tablespoon cumin powder
1 teaspoon turmeric powder
2 tablespoons ginger-garlic paste
4 cups hot water
1 cup paneer

Soak chickpeas for at least 8–9 hours.

Add clarified butter to a pan and then add the soaked chickpeas.

Put tea leaves into a muslin cloth with black cardamom, black peppercorns, and cloves, tie it up, and add it to the chickpeas.

Add a little salt to the chickpeas.

Prepare a bouquet garni with whole spices and add bay leaf directly.

Blanch spinach leaves in boiling water, then shock in cold water to maintain color.

Remove thick stems from spinach leaves.

Grind the spinach into a paste.

In a pan, heat oil and add bay leaf, cinnamon stick, dried red chillies, and cumin seeds.

Add coriander powder, degi red chilli powder, cumin powder, and turmeric powder.

Add ginger-garlic paste after onions are 90% cooked, then add chopped tomatoes.

Cook the mixture until the tomatoes are slightly raw, then add the spinach paste.

Add chopped coriander stems and paneer, then add hot water to thin out the gravy.

Add the cooked chickpeas to the gravy and let it cook for at least 10 minutes without stirring too much.

Add a final tempering of clarified butter on top for aroma.
