Kleftico, originating from Greece, is a traditional dish that reflects the country’s pastoral heritage. The name derives from 'kleftes' or thieves, who supposedly cooked lamb in a sealed pit to avoid detection. This slow-cooked method results in incredibly tender meat infused with aromatic herbs and spices, making it a favorite for family gatherings and celebrations. Pound and smash 10 cloves of garlic.

Juice 1 lime and add it to the mixture.

Add 1 teaspoon of regular salt and 1 teaspoon of black pepper powder.

Squeeze the juice of 2 lemons into the mix.

Add nearly 2 tablespoons of oregano and crush 4-5 bay leaves before adding them.

Pour in nearly 150 ml of water and mix everything together.

Nestle 1 kg of lamb shanks into the mixture, ensuring they are surrounded by the vegetables.

Toss the lamb with the mixture and sprinkle more smoked paprika on top.

Drizzle nearly 40 ml of extra virgin olive oil over the top.

Add 200 grams of crumbled feta on top of the mixture.

Preheat the oven to 170 degrees Celsius on fan mode or 180 degrees Celsius on conventional mode.
