Toqlija is a traditional Maltese dish, often associated with family gatherings and festive occasions. Its roots trace back to rural cooking, where hearty stews were a way to feed large families using simple, local ingredients. Today, Toqlija is cherished for its comforting flavors and is a staple in Maltese cuisine, often enjoyed during celebrations or Sunday dinners.

Grape juice maintains sweetness without alcohol.
Heat olive oil in a pot.
Add chopped onions and frozen garlic, sauté until soft.
Add 2-3 tablespoons of conserva (tomato paste) and season with salt and black pepper.
Add boiling water to the pot and stir.
Chop and add 3-4 large pieces of potatoes to the pot.
Add more boiling water until the pot is nearly full and bring to a boil.
Once boiling, simmer until potatoes are tender.
Add 1/4 cup of small tube pasta (ditalini) and cook until al dente.
Add frozen peas and parsley, stir, and cook until peas are heated through.
