Today, cannoli have transcended their Italian roots, becoming a beloved dessert in many cultures, with variations featuring different fillings and flavors.

Pour 300 grams of whipping cream into a large bowl.
Whisk the cream until stiff peaks form, using a regular whisk.
In another bowl, add 250 grams of ricotta and 250 grams of sweetened condensed milk; mix until smooth.
Gently fold the whipped cream into the ricotta mixture to keep it airy.
Add 88 grams of chocolate chips to the mixture and fold in gently, reserving some for topping.
Pour the mixture into a loaf pan, banging it a little to make it even.
Sprinkle the reserved chocolate chips on top of the mixture.
Cover the loaf pan with plastic wrap and freeze for 5-8 hours before serving.
In a bowl, combine 1 3/4 cups of all-purpose flour, 2 tablespoons of sugar, 1/2 tablespoon of cocoa powder, and 1/4 teaspoon of cinnamon; whisk together.
Make a well in the center of the dry ingredients and add 2 tablespoons of softened butter, 1 egg, and 3 tablespoons of water.
Mix the ingredients with a fork until it starts to form a dough; add more water if the dough is too dry.
Knead the dough on a flat surface until smooth, then form it into a ball and wrap it in plastic wrap.
Let the dough rest in the fridge for 20 minutes.
Preheat the oven to 350 degrees Fahrenheit.
Roll out the dough very thinly using a rolling pin.
Spray a muffin tin with baking spray or flour it, then create dough shells in the muffin tin.
Check if the shells are ready and let them cool before removing them from the tin.
Retrieve the ice cream from the loaf pan and scoop it into the cannoli shells.
Top the ice cream with pistachio cream and crushed pistachios.
