In a bowl add semolina, flour, salt, and oil. Gradually add water and knead smooth dough for 7 to 10 minutes. Cover with a damp cloth and set aside for 10-15 minutes.

In a blender add coriander, green chilies, lemon juice, black salt, salt, and cumin. Blend until a smooth paste is formed for the green chutney.

In a blender add tamarind pulp, jaggery, salt, black salt, red chili flakes, and cumin. Blend until a smooth paste is formed for the imli ki chutney.

For papri: in a bowl add flour, salt, carom seeds, and ghee. Gradually add water and knead hard dough. Let it rest for 10 to 15 minutes.

Take the dough and roll out into a very thin sheet. Then cut small circles of it and prick them with a fork.

Heat oil in a pan and fry papri until light golden brown and crispy from both sides.

Take the kachori dough and roll out into a very thin sheet. Take a round mold and cut the dough into a big circle.

Heat oil in a pan and fry kachori; as soon as kachori puffs, slow down the flame and fry for 2-3 minutes or until light golden brown.

Remove the top of your kachori and fill it with potatoes, chickpeas, phulkiyan, tomatoes, onion, sev, meethi chutney, green chutney, yogurt, chaat masala, and papri. Sprinkle red chili flakes and pomegranate seeds on top and serve.
