Today, Karanji is enjoyed across India, with various regional adaptations, making it a beloved treat for many.

Prepare the dough by mixing all-purpose flour and semolina in a bowl.
Add desi ghee to the flour mixture and rub until crumbly.
Gradually add water and knead until smooth; cover and let rest for 30 minutes.
Prepare the filling by mixing sugar powder, cardamom powder, crushed dry fruits, and desiccated coconut in a bowl.
Divide the dough into small balls and roll each into a circle.
Place a spoonful of the filling in the center of each circle.
Fold the dough over to form a half-moon shape and seal the edges by pressing with fingers.
Heat ghee or oil in a deep pan over medium heat until hot.
Fry the gujiyas in batches until golden brown, about 4-5 minutes each.
Remove and drain on paper towels; let cool slightly.
