Traditionally filled with a mixture of meats and greens, this dish reflects the rustic culinary heritage of the area, often enjoyed during family gatherings and festive occasions. Today, Tordelli is celebrated not only in Tuscany but also in various Italian restaurants worldwide, showcasing its rich flavors and comforting nature.

Prepare the filling by mixing 500 grams ground beef, 500 grams ground pork, and 100 grams mortadella in a bowl.
Add 100 grams parmesan cheese, nutmeg, salt, and black pepper to the meat mixture; mix well.
Cook the meat mixture in a pan with olive oil, shallot, rosemary, and sage until browned, about 5-6 minutes.
Let the filling cool and then refrigerate for about an hour.
For the pasta dough, combine 500 grams flour 0 and 500 grams re-milled semolina in a bowl.
Make a well in the center and add 10 beaten eggs; mix until a dough forms.
Knead the dough for a few minutes until smooth; cover with a cloth and let rest at room temperature for about 30 minutes.
Roll out the dough using a pasta machine, starting with the widest setting and gradually moving to thinner settings.
Cut the rolled dough into squares or circles, about 3 inches in diameter.
Place a spoonful of filling in the center of each piece of dough; fold and seal the edges.
Bring a large pot of salted water to a boil; add the tordelli and cook for 4 minutes until they float to the surface.
In a separate pan, heat olive oil and add the cooked tordelli; sauté for about 1 minute to finish cooking.
Serve hot, garnished with more parmesan cheese.
