1 cup besan (gram flour)
1 cup fine semolina
3-4 tablespoons ghee
1 cup sugar
1/2 cup water
cardamom powder
dry fruits (raisins, cashews, almonds)
3-4 tablespoons desiccated coconut

ghee

🥗Healthier: coconut oil

Coconut oil provides a similar richness with fewer saturated fats.

jaggery

🥗Healthier: brown sugar

pistachios

Sunflower seeds are less expensive and nut-free.

almonds

Peanuts are a cost-effective nut alternative.

1

Sift 1 cup of besan into a bowl.

2

Add 1 cup of fine semolina and mix well.

3

Add 3-4 tablespoons of ghee and mix until well combined.

4

Gradually add water to form a soft dough and let it rest for 10 minutes.

5

In a pan, heat some ghee and roast the dry fruits until golden brown.

6

In the same pan, add 1 cup of sugar and 1/2 cup of water to make a syrup.

7

Once the syrup reaches a one-string consistency, add cardamom powder and turn off the heat.

8

After the dough has rested, divide it into two portions and roll them out.

9

Use a fork to create holes in the rolled dough to ensure it crisps up while cooking.

10

Heat a tava (griddle) and cook the rolled dough until crispy, flipping and adding ghee as needed.

11

Once cooked, break the crispy dough into small pieces and let it cool.

12

Blend the cooled pieces in a mixer with 3-4 tablespoons of ghee, 3-4 tablespoons of desiccated coconut, and the roasted dry fruits.

13

Gradually add the syrup to the mixture until it reaches the desired consistency for shaping.

14

Shape the mixture into laddus of your preferred size.
