Get 3 bananas that are slightly underripe and a little bit green.

Peel the bananas and slice them in half both horizontally and across for four quarter pieces.

Place the sliced bananas on a plate and take them over to the stove.

Add 6 tablespoons of butter to a large pan over medium heat.

Add 1/2 cup of coconut sugar to the pan.

Add 1/2 teaspoon of ground cinnamon, 1 teaspoon of vanilla extract, and a pinch of kosher salt to the pan.

Whisk the mixture for about a minute until it starts to bubble.

Add the bananas cut-side down into the pan and cook for about 1 to 2 minutes until softened and slightly caramelized.

Use a spatula to flip the bananas over.

Turn the heat off to avoid an active flame.

While the sauce is still bubbling, add 1/4 cup of dark rum and ignite the sauce with a long-reach lighter to flambe the bananas, shaking the pan until the flame goes out.

Let the sauce simmer for another minute or two to burn off most of the alcohol if not flambéing.

Place 3 pieces of banana into a serving bowl and drizzle with extra spoonfuls of the sugary rum sauce.

Dollop a large ball of vanilla ice cream on top of the warm bananas and drizzle with extra sauce.
