Mix kosher salt, brown sugar, and pickling spice in a large container for brining.

Boil 2 quarts of water and pour it over the brine ingredients to dissolve them.

Score the skin of the picnic shoulder about 1 inch apart in a diamond pattern.

Increase the oven temperature to 425°F and continue roasting until the internal temperature reaches 145-150°F.

Brush the pork with maple mustard glaze and return it to the oven for 5 minutes.
