1

Remove the rind from the ham and pat it dry.

2

In a bowl, add 1 cup of Dijon mustard, 1/2 cup of brown sugar, 1/2 cup of honey, 1/4 teaspoon of ground clove, and 1/2 teaspoon of ground cinnamon. Mix well.

3

Score the exterior of the ham in a crosshatch pattern.

4

Slather half of the mixture onto the ham, reserving the other half for later.

5

Sprinkle 1/2 cup of brown sugar on the exterior of the ham and dress it with 2 cans of pineapples and several cherries using toothpicks.

6

Place the ham in a 22 quart roaster oven on the rack.

7

Add 4 cups of water to the bottom of the roaster oven.

8

Pour the reserved mixture over the ham.

9

Bake at 325°F for 15 to 18 minutes per pound until the internal temperature reaches 140°F, approximately 2 hours.

10

For the last 15 minutes, crank the heat to 450°F for browning.

11

Make a glaze by combining 8 ounces of reserved pineapple juice, 4 ounces of cherry juice, 1 cinnamon stick, and 10 to 12 whole cloves in a saucepan. Simmer and steep for a few minutes.

12

Remove the cinnamon stick and cloves, then add 1/4 cup of light brown sugar and 1/4 to 1/3 cup of honey to the glaze. Bring to a boil and reduce until frothy.

13

Pour the glaze over the ham and cover with the lid. Cook for an additional 10 to 15 minutes.

14

Let the ham rest for about 30 minutes before slicing.

15

Ladle out pan juices and reduce them by half for serving.

16

Slice the ham and serve with the reduced pan juices, pineapples, and cherries.
