Sunflower seeds are budget-friendly and nut-free.
Separate egg yolks and egg whites.
Add 1/4 cup (50 g) sugar to the yolks and 1 teaspoon vanilla extract, then beat to combine.
Bring 100 ml heavy cream to a gentle simmer.
Gradually pour hot cream into the yolk mixture while constantly whisking.
Transfer the mixture into a saucepan and cook over medium heat for 5-7 minutes, stirring constantly until thickened.
Transfer the mixture into a bowl and place in the fridge for 1 hour.
Beat 2/3 cup (150 g) soft butter until fluffy and pale in color, beating on medium speed.
Add the chilled cream to the butter 3-5 tablespoons at a time, whisking until combined.
Process 140 g whole toasted almonds with 1/4 cup (50 g) sugar into fine crumbs.
Beat egg whites with a pinch of salt until foamy, then gradually add 1/4 cup (50 g) sugar and beat until stiff peaks form.
Gradually fold in the ground almonds until just combined, being careful not to overmix.
Place an 18 cm ring onto a lined pan and transfer half of the batter into the ring, spreading it evenly.
Gently remove the ring and bake in a preheated oven at 355°F (180°C) for 40-45 minutes or until lightly browned.
Let cool in the pan for 5 minutes, then flip gently onto a rack and peel off the paper.
Cool completely before assembling the cake, spreading 1/3 of the frosting on top, then adding another 2/3 of frosting and decorating with toasted almond flakes.
Refrigerate for at least 2 hours before serving.
