Preparare la frolla mescolando farina, zucchero, strutto, ammoniaca, vanillina e acqua tiepida.
Per il ripieno, mescolare fichi secchi tritati, zucchero, mandorle, cioccolato fondente e scorza d'arancia o mandarino.
Preparare la glassa montando gli albumi con succo di limone e aggiungendo zucchero a velo poco per volta fino a ottenere una consistenza lucida.
Assemblare i biscotti con la frolla e il ripieno, quindi cuocere in forno.
Applicare la glassa sui biscotti una volta raffreddati.
