Chicken breast is leaner and often less expensive.
Put on gloves and prepare the pork chops for marinating.
In a mixing bowl, add 2 tablespoons of soy sauce, 1/4 cup of sugar (can use white or brown), 1/4 cup of fish sauce, 2 tablespoons of rice vinegar, and 1 teaspoon of lime juice.
Chop the white parts of the scallions (about 1 tablespoon) and add to the marinade.
Mix the marinade and set aside to let the pork marinate for at least 30 minutes.
Prepare the scallion salad by discarding the white parts of the scallions and using the green parts in a bowl.
Add 3 tablespoons of rice vinegar, 2 tablespoons of fish sauce, 1 teaspoon of lime juice, and a drizzle of sesame seed oil to the scallion greens and mix.
Set the scallion salad aside to wilt from the acid.
Heat a pan over medium-high heat and add vegetable oil.
Once the pan is hot, add the marinated pork chops and cook for about 4 minutes on each side, totaling around 8 minutes.
If you prefer well-done pork, cook for about 10 minutes total.
If unsure about doneness, preheat the oven to 500°F and transfer the pork chops to the oven after searing to finish cooking.
While the pork is cooking, prepare the choice sum by adding oil to a pan, then garlic, and a splash of fish sauce and sesame oil, cooking briefly.
Remove the choice sum from heat once it has color and is wilted.
Once the pork is done, remove it from the oven and let it rest briefly before plating.
To plate, place the choice sum at the bottom, add the pork chop on top, and spoon the scallion salad over the dish.
