Peel the red carrots.

Grate the carrots using the thicker side of a grater.

Press the sauté button on the Instant Pot and wait until it displays hot.

Add 1 tablespoon of ghee to the pot.

Fry cashews and raisins in the ghee for about 1 minute until golden brown and plump, then remove them from the pot.

Add the grated carrots to the pot and sauté for 2 minutes.

Pour in 3/4 cup of whole milk and stir.

Close the lid and set the valve to sealing, then pressure cook on high for 4 minutes.

After 2 minutes of pressure release, quick release the remaining pressure by turning the valve to venting.

Stir the mixture and press the sauté button again.

Add sugar to taste and sauté while stirring continuously for around 3 minutes until the liquid dries out.

Add milk powder to the mixture and cook for an additional 3-4 minutes until the liquid dries out.

Add 1.5 tablespoons of ghee and continue cooking while stirring until the halwa reaches a nice aroma and bright red color, about 7-8 minutes.

Add the reserved cashews and raisins back into the pot along with cardamom powder and mix well.

Unplug the Instant Pot and serve the gajar halwa in a bowl.
