Traditionally made during winter months when carrots are in season, this sweet dish is often prepared for festivals and celebrations. Its rich flavor comes from slow-cooking grated carrots in milk and ghee, making it a festive favorite. Today, Gajar ka Halva is enjoyed across the globe, with variations that include different nuts and sweeteners, reflecting regional tastes and dietary preferences.

Heat 2 tablespoons of ghee in a pressure cooker.
Chop 1 kg of fresh carrots into one-inch strips, removing excess white parts.
Add the carrot pieces to the hot ghee in the pressure cooker and sauté for about 2 minutes.
Pour in 0.5 liters of full fat milk and stir.
Cover the pressure cooker and cook for two whistles on medium flame.
In a separate pan, heat 1 teaspoon of ghee and add 2 tablespoons of chopped cashews, frying until golden brown.
Add almond flakes and pistachio flakes to the pan and fry briefly until done.
After two whistles, turn off the flame and let the pressure cooker cool for a few minutes before opening it.
Mash the cooked carrots slightly to achieve the appropriate texture for the halwa.
Add 1.25 cups of sugar to the mashed carrot and milk mixture and stir.
Cook the mixture on low heat, stirring periodically, until it thickens to the desired consistency.
Add the roasted nuts and 1 teaspoon of cardamom powder to the mixture and mix well.
Garnish the halwa with reserved nuts before serving.
