Baked Oatmeal

1/2 cup sliced almonds
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 3/4 cups milk (dairy or dairy free)
1/4 cup honey or maple syrup
2 large eggs
2 tablespoons melted butter or coconut oil
2 teaspoons vanilla extract
2 1/2 cups frozen mixed berries

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).

Grease a 9-inch square baking dish with butter or coconut oil using a paper towel.

In a large mixing bowl, combine 2 cups of old-fashioned rolled oats, 1/2 cup of sliced almonds, 1 teaspoon of ground cinnamon, 1/2 teaspoon of baking soda, and 1/2 teaspoon of kosher salt. Stir until well combined and set aside.

In another mixing bowl, mix together 1 3/4 cups of milk, 1/4 cup of honey or maple syrup, 2 large eggs, 2 tablespoons of melted butter or coconut oil, and 2 teaspoons of vanilla extract. Whisk until lightly frothy.

Pour the wet ingredients into the bowl with the dry ingredients and stir to combine.

Add 2 1/2 cups of frozen mixed berries to the mixture and stir until evenly distributed.

Pour the combined mixture into the greased baking dish and flatten it down with a spoon or spatula.

Optionally, dot the top with a few extra berries and sliced almonds for garnish.

Bake for about 40 to 45 minutes or until the oatmeal is set, no longer liquidy, and the edges are slightly golden. Check at the 40-minute mark as baking times may vary.

Remove from the oven and let it cool slightly before serving. Scoop out portions and serve warm, optionally topped with yogurt.
