Baked Oatmeal

4 cups oats
2 cups homemade yogurt
1 cup water
4 eggs
1 cup maple syrup
3/4 cup melted butter
3 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons vanilla
1 cup milk
1 cup homemade cinnamon applesauce

Soak 4 cups of oats with 2 cups of homemade yogurt and 1 cup of water in the fridge overnight.

Add 4 eggs to the soaked oats and mix well.

Add 1 cup of maple syrup and mix it in.

Pour in 3/4 cup of melted butter and mix until combined.

Add 3 teaspoons of baking powder and 1/2 teaspoon of salt, then mix again.

Stir in 2 teaspoons of vanilla extract.

Add 1 cup of milk and mix until incorporated.

Fold in 1 cup of homemade cinnamon applesauce.

Add 1.5 cups of frozen blueberries and mix until evenly distributed.

Butter a 12-inch cast iron skillet to prevent sticking.

Pour the oatmeal mixture into the cast iron skillet.

Bake in a preheated oven at 350 degrees Fahrenheit for 35 to 40 minutes, checking for a caramelized top.

Leave in the oven for closer to 50 minutes for a more caramelized color.
