Start by making the sauce base (molho rôti) using pork with bone, beef shank, bone marrow, and chicken drumsticks in a large pot.
Add oil and butter to the pot and place the meats inside without seasoning to create the broth.
Chop a carrot, onion, and parsley stems into small pieces and add them to the pot.
Pour in 2 liters of water and add cachaça for flavor.
Add two tomatoes and a bit of their juice, along with two bay leaves and a pinch of white pepper.
Cut the beef into slices about the thickness of a finger and season with salt and black pepper.
Prepare the filling by chopping hard-boiled eggs, bacon, calabresa sausage, and carrots into strips.
Place the filling ingredients, including green olives, onto the seasoned beef slices and roll them tightly.
Secure the rolls with kitchen twine, making sure to tie the ends first to prevent the filling from pushing out.
Heat oil in a pressure cooker and brown the beef rolls on all sides without moving them too much to keep the filling intact.
Once browned, add the prepared molho rôti to the pressure cooker and cover.
Cook under pressure for 20 minutes after it reaches pressure.
After cooking, release the pressure and reduce the sauce to thicken it.
