South African-Style Beef Stew

Add chopped onions and sauté until translucent, about 5 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Add beef cubes and brown on all sides, about 8-10 minutes.
Sprinkle in paprika, thyme, and black pepper, stirring to coat the beef.
Pour in red wine, scraping up any browned bits from the bottom of the pot.
Add diced tomatoes, beef stock, and bay leaves; bring to a simmer.
Reduce heat to low, cover, and cook for 1.5-2 hours until beef is tender.
Add chopped carrots, potatoes, and green bell peppers to the pot.
Continue to simmer for another 30-40 minutes until vegetables are tender.
Stir in sliced mushrooms and cook for an additional 10 minutes.
Remove bay leaves before serving and garnish with chopped parsley.
