15g Ginger

1 tbsp light soy sauce
1/8 tsp salt
2 tsp cornstarch
30ml water
2 tsp cooking oil
1/4 tsp salt (for pineapple)
10g Ginger (for pineapple)
1/2 Onion
1 tbsp rice wine (for pineapple)
2 tsp light soy sauce (for pineapple)
2 tsp brown sugar
1/4 tsp cinnamon
1/8 tsp black pepper
100ml water (for pineapple)
6 pieces pineapple
Chopped green onion (optional)

Soak 700g pork in cold water for 20 minutes, then pat dry.

Tenderize pork with the back of a knife or meat mallet.

Add 15g ginger and 6 cloves garlic to the pork.

Mix in 1 tbsp rice wine, 1 tbsp light soy sauce, 1/8 tsp salt, 2 tsp cornstarch, and 30ml water until the liquid is absorbed.

Add 2 tsp cooking oil and mix well, then marinate for 20 minutes.

Soak pineapple in water with 1/4 tsp salt.

Add 10g ginger, 1/2 onion, 1 tbsp rice wine, 2 tsp light soy sauce, 2 tsp brown sugar, 1/4 tsp cinnamon, 1/8 tsp black pepper, and 100ml water to the pineapple and mix well.

Heat cooking oil over medium heat and add the marinated pork.

Cook until the bottom browns, then flip and cook until both sides are browned, then remove from heat.

Add onion and ginger to the skillet and stir-fry until fragrant.

Add 6 pieces of pineapple and stir-fry until slightly soft.

Add the browned pork back to the skillet.

Pour in the sauce and cover, simmer on low for 5 minutes.

After 5 minutes, uncover and stir well.

Cover again and simmer for another 5 minutes.

Mix 2 tsp cornstarch with 50ml water to create a slurry and pour it into the skillet.

Add the 6 pieces of pineapple and stir well again.

Garnish with chopped green onion if desired.
