They reflect the country's rich culinary heritage, combining indigenous and Spanish influences. Today, pinchos are popular not only in Panama but also across Latin America, with various regional adaptations featuring different meats and marinades.

Chicken is leaner and more affordable than beef.

Vegetable oil is less expensive and has a neutral flavor.
Chop a handful of fresh cilantro and parsley, using only the green parts of the parsley.
Finely chop the cilantro and parsley.
Grate two cloves of garlic and add them to the bowl with the meat.
Chop an onion and add it to the meat mixture.
Season the meat with a good amount of salt, black pepper, paprika, cumin, and a little chili and oregano.
Mix the ingredients well and let them marinate for at least 40 minutes.
Cut bacon into strips and cook it in a pan until crispy.
Remove the bacon and use the rendered fat to sauté the noodles until crunchy.
Add 1.5 cups of rice to the pan with the noodles.
Pour in 3 cups of water and add the leftover chopped onion.
Form the marinated beef into shapes and thread them onto skewers.
Preheat an infrared grill or pan until hot.
Cook the skewers on the grill, monitoring until they are done.
Serve the skewers with the rice and noodles.
