Asparagus Soup

1 lb asparagus
2 small potatoes
2 cloves garlic
splash of white wine (optional)
4 cups vegetable broth

Prepare the garlic by pushing down to loosen the skin, peel, and chop it.

Peel and chop the potatoes, not worrying about uniformity since they will simmer for 30 minutes.

Wash the asparagus and bend the ends to break off the woody parts, discarding them.

Chop the asparagus into smaller pieces after discarding the woody ends.

Heat a large pot over medium heat and add the olive oil.

Once the oil is hot, add the chopped asparagus and potatoes, stirring to coat with oil.

Cook the vegetables for about 5 minutes, stirring often to prevent sticking.
