4 tsps butter
2 bay leaves
4 tsps chopped garlic
2 medium white onions, chopped
Salt to taste
4 cups vegetable stock
2 tbsps fresh cream + to drizzle
Parmesan shavings for garnish
Crushed black peppercorns to sprinkle

Chop the asparagus roughly.

Heat olive oil and butter in a deep pan. Add bay leaf, garlic and sauté for 30 seconds.

Add onion and sauté till translucent.

Add chopped asparagus, salt and sauté for a minute.

Add vegetable stock and mix well. Once the mixture comes to a boil, lower the heat and cook for 10-15 minutes.

Grind to fine mixture with the help of a hand blender. Cook for 2-3 minutes.

Add fresh cream and mix well.

Transfer in a serving bowl, garnish with parmesan shavings, drizzle fresh cream, sprinkle crushed peppercorns, place asparagus spears and serve hot.
