  • 2 slices whole grain bread
  • 1 ripe avocado
  • 1 cup rocket (arugula)
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp lemon juice

Instructions

  1. 1Toast the slices of whole grain bread until golden brown.
  2. 2While the bread is toasting, cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  3. 3Mash the avocado with a fork, then add lemon juice, salt, and black pepper to taste.
  4. 4In a separate bowl, combine the rocket and cherry tomatoes, then drizzle with olive oil and toss gently.
  5. 5Once the bread is toasted, spread the mashed avocado evenly on each slice.
