1

Add 1/2 teaspoon baking powder, sugar, salt, yeast, and turmeric to all-purpose flour.

2

Knead the flour mixture and gradually add lukewarm water to form a soft dough.

3

Add about 1 tablespoon of oil to the dough and let it sit for about 6 hours or overnight.

4

Soak chickpeas (Chana) overnight with 1 teaspoon baking soda and lots of water.

5

In a pot, add 12 cups of water and bring to a boil.

6

Rinse the soaked chickpeas several times and check for any dark ones or stones.

7

Add the rinsed chickpeas to the boiling water along with 2 tablespoons of salt and 1 teaspoon of baking soda.

8

Stir to combine and scoop up any impurities that rise to the top.

9

Boil the chickpeas for about an hour until very tender.

10

Add 2 tablespoons of bandania, 1 tablespoon of garlic, and 1/4 teaspoon of turmeric, and mix well.

11

Continue boiling for about 15-20 minutes, stirring with a wooden spoon to achieve the right consistency.

12

Finish with bandania and AAR Masala, or ground cumin if AAR Masala is unavailable.

13

Heat oil until it's very near smoking.

14

Break off a piece of dough, press it out to a 5-6 inch round, and drop it in the hot oil.

15

Cook for a couple of seconds on each side until golden brown.

16

Remove and place on paper towels to drain.

17

Wrap the cooked baras in a paper towel or kitchen towel and place in a sealable container for a few minutes before serving.
