The dish reflects the diverse culinary influences of the Caribbean, combining Indian and African flavors through the use of chickpeas and spices. Today, Doubles are beloved not just in Trinidad but have found fans globally, often served at festivals and gatherings, showcasing the rich cultural tapestry of the region.

Start with the barra by adding white flour, oil, saffron, brown sugar, yeast, and salt into a bowl.
Mix the dry ingredients together using your fingers.
Add water gradually while mixing until the dough comes together, aiming for a softer texture than roti dough.
Once mixed, add oil on top to keep the dough soft and prevent crusting.
Cover the dough and let it rest while preparing the chickpea filling.
For the chickpea filling, use 4 cups of chickpeas that have been soaked overnight and boiled with a dash of salt.
Add curry powder, garlic, and ground roasted jeera to the chickpeas.
Heat a pot on medium heat and add the chickpeas, stirring as you go.
Add salt, curry powder, and ground jeera to the pot, then stir together.
Add water to cover the chickpeas and let it boil for about 10 minutes.
After 10 minutes, add green seasoning and ground roasted jeera, mixing well.
Let it cook for another 7 minutes until it thickens slightly, ensuring it remains a bit runny for the doubles.
Prepare the barra by oiling a tray and your fingers to prevent sticking.
Divide the dough into golf ball-sized pieces and stretch them out, ensuring the middle is not too thick.
Heat oil in a frying pan until very hot, then fry the stretched dough for a few seconds on each side until golden brown.
Assemble the doubles by placing a piece of barra down, adding the chickpea filling, and topping with chutneys as desired.
