Originating from the streets of Trinidad, Doubles are a beloved street food made of two fried flatbreads filled with spicy chickpeas. Traditionally served with various chutneys and toppings, they embody the vibrant flavors of Trinidadian cuisine. Today, Doubles have gained popularity beyond Trinidad, enjoyed by food lovers around the world as a delicious and filling snack.

Soak chickpeas for about 6 hours.
Combine split peas and chickpeas in the Instant Pot with salt and baking soda, cover with water, and pressure cook for about 10 to 12 minutes.
Transfer the cooked chickpeas and split peas to the stovetop.
Add garlic and green seasoning to the chickpeas and split peas, along with curry powder and other seasonings, and stir.
Simmer on medium heat for about 20 minutes to incorporate flavors.
In a bowl, combine all-purpose flour, baking powder, salt, sugar, turmeric, and yeast.
Gradually add water until a soft dough forms, softer than roti dough.
Knead in some vegetable oil and cover the dough to rest for a few hours.
After resting, oil your hands and surface, then pinch off small pieces of dough, about half the size of a roti.
Flatten each piece using a plate to guide the size, making them as thin as possible.
Preheat oil on high heat for frying.
Fry each flattened dough for about 2 to 3 seconds per side until soft, not crispy or brown.
Assemble the doubles by placing a fried dough piece down, adding the chickpea mixture in the middle, and topping with condiments.
