1 lb beef tendons
1 lb beef with marrow
2 medium onions
2 leeks
2 cups celery
4 cups carrots
1 cup parsley (leaves)
2 tablespoons thyme
3 bay leaves
1 tablespoon black pepper seeds
10 cups water
1 cup parsley roots

Preheat the oven.

Layer vegetables (onion, leek, celery, carrots) in the bottom of a roasting pan.

Place beef bones and tendons on top of the vegetables.
