Cut off the top and bottom of the pineapple.
Cut along the sides of the pineapple to remove the skin.
Cut the pineapple down the center and remove the core, then chop into small pieces.
Blend the pineapple pieces with fresh ginger until smooth.
Add 2 tablespoons of brown sugar, a teaspoon of cardamom, and cloves to the blended pineapple.
Cook the pineapple mixture until it is mostly dry, fishing out the orange peel and cloves afterward.
In a bowl, add warm water and milk, ensuring it's not too hot for the yeast.
Add 1 teaspoon of sugar to the warm water and mix in the yeast, allowing it to activate.
In another bowl, combine 1 egg, 1/4 cup of butter, and 1/4 cup of sugar, creaming them together.
Make a well in the flour, add the yeast mixture and the creamed mixture, and mix until combined.
Add 1/2 teaspoon of nutmeg, 1 teaspoon of cinnamon, and a pinch of salt to the dough and knead until spongy.
Cover the dough with butter and plastic wrap, then a dish cloth, and let it proof in a warm space.
After proofing, punch down the dough and portion it into six pieces.
Shape the dough pieces and place them on a baking sheet, allowing them to rise again.
Cover the dough pieces and let them rise until they are nice and brown.
Bake in the oven for 15-20 minutes, checking for color, and broil for 2 minutes if necessary.
