Wash the goat meat thoroughly.

Add hot water to the pot to prevent dropping the cooking temperature, then cover and cook on low heat for about 45 minutes to 1 hour until the meat is tender.

Add chopped carrots, potatoes, pimento peppers, scallion, and a whole scotch bonnet pepper to the pot.

Pour in coconut milk and mix well.
