Combine 250 ml lukewarm milk, 25 g fresh yeast (or 7 g dried yeast), and 1/2 teaspoon sugar in a bowl and let it rest until the yeast rises.

In a large bowl, combine 500 g sifted flour, 2 teaspoons salt, and 1 teaspoon ground pepper.

Add the activated yeast mixture to the flour mixture and knead until smooth, flexible, and soft.

Leave the dough to rise for 1 hour.

Roll out the dough into a rectangle about 5 mm thick.

Spread 400 g of ground breadcrumbs evenly over the dough.

Fold the dough as shown in the video and let it rest for 20 minutes.

Stretch the dough again, fold, and let it rest.

Repeat stretching and folding again, then cut the dough diagonally across the top (but don't cut through!).

Cut medium-sized discs from the dough.

Brush the top with a beaten egg and let it rest for 20 minutes.

Bake in a preheated 200°C oven for 25 minutes.
