Homemade Condensed Milk

Take a heavy-bottomed pan and add 500 ml of milk.
Add 200 grams of sugar to the milk.
Turn the heat to high and continuously stir until the sugar dissolves completely in the milk.
Keep stirring while bringing the mixture to a high simmer, scraping the sides to mix in any cream that forms.
Continue cooking until the milk reduces to half its original volume, watching for small bubbles to form.
Add 1/4 teaspoon of baking soda to the mixture and stir well.
Continue cooking until the texture changes and the bubbles become smaller.
Remove from heat and let it cool slightly before transferring to a clean glass bottle for storage.
