Season the pork with salt, pepper, unpeeled crushed garlic, sweet red pepper paste, bay leaf and white wine. Let marinate about 1 to 2 hours.

In a large saucepan, add the olive oil and the sliced onion. Sauté over low heat until the onion starts to turn slightly golden, stirring occasionally.

Add the pork and the marinade and stir with a spoon. Cover the pan with a lid and cook over medium-low heat about 35 to 40 minutes, stirring occasionally. Turn off the heat, sprinkle with chopped coriander and set aside.

Boil the water in a saucepan.

In a large saucepan, add the olive oil and the peeled garlic. Sauté over low heat about 3 to 4 minutes, stirring occasionally.

Add the bread cut into pieces, season with salt and pepper and mix in the sauté. Gradually pour the boiling water and stir with a wooden spoon until the bread begins to fall apart.

Sprinkle with chopped coriander, mix well and serve the migas with the pork.
