Boil beef bones in a pot of water until it reaches a rolling boil.
Cover the pot and let it simmer for about 2 minutes.
After 2 minutes, remove the bones from the pot and clean them under cold water.
Chop the onion slightly and add it to the pressure cooker with the beef bones.
Add ginger, salt, and sate sauce to the pressure cooker.
Fill the pressure cooker with water and cover it tightly.
Cook the beef bones in the pressure cooker on medium-high heat for about 45 minutes.
Release the pressure from the cooker before opening it.
Strain the broth and remove any excess fat.
In a separate bowl, mix the sate sauce with peanut butter and add it to the strained broth.
Bring the broth back to a boil and skim off any foam that forms on top.
Prepare the rice noodles in a pot of hot water until they are soft.
Add the cooked noodles to a serving bowl along with slices of beef.
Ladle the hot broth over the noodles and beef.
Garnish with lime wedges, bean sprouts, chopped green onions, and coriander.
