Dal Tadka

1 cup Toor dal
1/2 cup masoor dal
1/2 cup chana dal
2 tbsp ghee
2 tsp cumin seeds
1 inch ginger julienne
1 inch ginger chopped
6-7 cloves garlic chopped
3-4 green chillies chopped
2 whole red chillies
1 cup onions
1 cup tomatoes
1 tsp red chilli powder
1 tsp turmeric
1 tsp coriander powder
1 tsp amchur powder
salt to taste
1 tsp garam masala
1 tsp kasuri methi
100ml water
1/4 cup fresh coriander
1 tbsp ghee for tadka
1 tsp cumin for tadka
1/4 tsp red chilli powder for tadka
2 whole red chillies for tadka

Wash 1 cup Toor dal, 1/2 cup masoor dal, and 1/2 cup chana dal thoroughly. Soak the dal for at least 30 minutes.

In a pressure cooker, add 1 tbsp ghee and 1 tsp cumin seeds. Let the cumin sputter and add 1-inch ginger julienne. Cook for 2 minutes and add the soaked dal. Add water 2 inches above the dal and pressure cook for 3 whistles. Set aside and let it depressurize naturally.

In a large wok, add 2 tbsp ghee and 1 tsp cumin. Add 1 cup chopped onions and cook until they turn slightly brown.

Add 2 whole red chillies, 1 inch chopped ginger, 6-7 cloves chopped garlic, and 3-4 chopped green chillies. Cook for 2-3 minutes.

Add 1 cup tomatoes and cook until they are soft and mushy.

Add 1 tsp red chilli powder, 1 tsp turmeric, 1 tsp coriander powder, 1 tsp amchur powder, and salt to taste. Cook the spices for 2-3 minutes until oil separates.

Add the cooked dal, 1 tsp garam masala, and 1 tsp kasuri methi, and cook for 5 minutes.

Add 100ml water to adjust the consistency of the dal.

Add 1/4 cup fresh coriander.

Place live charcoal and pour ghee on top. Cover and let it settle for 5 minutes.

Remove and serve the dal tadka hot.

For the tadka, add 1 tbsp ghee, 1 tsp cumin, and 1/4 tsp red chilli powder. Slow cook for 1 minute and add 2 whole red chillies. Garnish the tadka on the dal before serving.
