ghee or oil

🥗Healthier: olive oil

💰Cheaper: vegetable oil

Olive oil is healthier; vegetable oil is budget-friendly.

1

Rinse the split pigeon peas, split red lentils, and split chickpeas in a colander to remove impurities.

2

Soak the rinsed legumes in water for 30 minutes to an hour.

3

Rinse basmati rice and soak it in water as well.

4

Blend chopped shallots, garlic, ginger, tomatoes, green chili, and a pinch of salt until smooth to create a flavor base.

5

Drain the soaked legumes and add them to a pot with sliced ginger, one split green chili, turmeric, and salt.

6

Cover with water and bring to a boil over medium heat, adding a splash of cooking oil to prevent boiling over.

7

Reduce heat to low, cover, and let simmer for about 30 minutes until soft.

8

Once the lentils are soft, fish out the ginger and chili pieces and set aside.

9

Cook the soaked basmati rice in boiling salted water with lime juice and lime rind until about 90% cooked, then drain and fluff with a fork.

10

In a large saucepan, heat ghee and toast whole cumin and dried chili until fragrant.

11

Add diced shallot or red onion and cook until caramelized.

12

Stir in the blended flavor paste and let it reduce while stirring occasionally.

13

Add garam masala, more turmeric, Kashmir chili powder, and smoked paprika to the mixture.

14

Pour in the cooked lentils and stir everything together.
