1/4 teaspoon turmeric
plain flour

1 tablespoon sugar
yeast
3 heaped tablespoons yogurt
pinch of salt

cumin seeds
coriander seeds
2 cloves
4-5 cloves garlic
1 thumb-sized piece of ginger
1 red onion
2 green chilies
2 tomatoes
Kashmiri chili powder
garam masala
coriander powder

Add 200g of split yellow pigeon peas to a pressure cooker.

Add water, a big pinch of salt, and 1/4 teaspoon of turmeric to the cooker.

Seal the lid and cook on high pressure for 8 minutes once it starts whistling.

Prepare the naan dough by making a well in plain flour and adding warm water, a little oil, sugar, yeast, yogurt, and a pinch of salt.

Knead the dough until smooth and let it rest for half an hour.

Release the pressure from the pressure cooker and check the dal for texture.

In a new pot, heat ghee and add cumin seeds, coriander seeds, and cloves to toast.

Chop garlic, ginger, red onion, green chilies, and tomatoes for the tadka mixture.

Sauté garlic and ginger in the pot, then add diced red onion and green chilies.

Add chopped tomatoes and cook until softened, adding water if necessary.

Stir in salt, Kashmiri chili powder, garam masala, and coriander powder.

Add the cooked dal to the pot and simmer on low heat for about 30 minutes.
