Soup Joumou

1 cup distilled white vinegar
1 whole lime cut in half
2 pounds of beef (mixture of chuck, beef stew, soup bones)
1 cup Epis
3 tablespoons fresh lime juice
1 tablespoon seasoned salt
1 medium calabaza squash (about 2 pounds), peeled, cubed
2 large Idaho potatoes cut into cubes
2 carrots (about 1 pound), sliced
1/4 small green cabbage (about 1/2 pound), very thinly sliced
1 medium onion, sliced
1 celery stalk, coarsely chopped
1 leek, white and pale-green parts only, finely chopped
2 small turnips, finely chopped
1 green Scotch bonnet or habanero
1 cup of rigatoni
6 whole cloves
1 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons of kosher salt
Pinch of cayenne
1/2 teaspoon freshly ground black pepper
1 parsley sprig
1 thyme sprig
3 branch culantro/shado beni
2 tablespoons olive oil
1 tablespoon unsalted butter

Cut beef into cubes and marinate with lime juice, distilled white vinegar, seasoned salt, and black pepper for at least 30 minutes.

In a large pot, heat water over medium heat and add marinated beef.

Bring to a boil, then reduce heat and simmer until beef is tender, about 1 hour.

Remove beef and set aside, reserving the broth.

In the same pot, add cubed calabaza squash, potatoes, carrots, cabbage, onion, celery, leek, and turnips to the broth.

Simmer the vegetables until softened, about 20 minutes.

Add thyme, parsley, and the reserved beef to the pot.

Stir in rigatoni and cook until al dente, about 8-10 minutes.

Adjust seasoning with kosher salt and black pepper to taste.

Serve hot, garnished with additional parsley if desired.
