Aam Papad is a traditional Indian sweet made from raw mango pulp, often enjoyed as a snack or dessert.

Ingredients

  • 2 cups raw mango pulp
  • 1 cup sugar
  • 1/2 tsp cardamom powder
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 1/2 tsp black salt (optional)

Instructions

  1. 1Wash and peel the raw mangoes, then chop them into pieces.
  2. 2In a blender, puree the mango pieces until smooth to make mango pulp.
  3. 3In a saucepan, combine the mango pulp, sugar, cardamom powder, salt, and lemon juice.
  4. 4Cook the mixture over medium heat, stirring continuously until it thickens and starts to leave the sides of the pan (about 15-20 minutes).
  5. 5Once thickened, remove from heat and let it cool slightly.
  6. 6Spread the mango mixture evenly on a greased tray or parchment paper to about 1/4 inch thickness.
  7. 7Leave the tray in a sunny spot for 2-3 days to dry, or use a dehydrator for faster results.
  8. 8Once dried, cut the aam papad into desired shapes or squares.
  9. 9Store the aam papad in an airtight container.

Mango leather is a popular snack in many tropical countries, made by drying pureed mangoes.

Ingredients

  • 4 ripe mangoes
  • 1/4 cup sugar (optional)
  • 1 tbsp lemon juice

Instructions

  1. 1Peel the mangoes and remove the pit.
  2. 2Puree the mango flesh in a blender until smooth.
  3. 3If desired, add sugar and lemon juice to the puree and blend again.
  4. 4Line a baking sheet with parchment paper.
  5. 5Spread the mango puree evenly on the parchment paper, about 1/8 inch thick.
  6. 6Preheat the oven to the lowest setting (around 140°F or 60°C).
  7. 7Place the baking sheet in the oven and let it dry for 6-8 hours, or until the mango leather is no longer sticky.
  8. 8Once dried, remove from the oven and let it cool completely.
  9. 9Cut the mango leather into strips and roll them up in parchment paper for storage.
