½ cup cooking oil
1 medium sliced onion
2 bay leaves
750 gms mutton mix boti
2 tbs ginger garlic paste
2 tsp red chili powder
1 & ½ tsp salt
½ tsp turmeric
1 & ½ tbs coriander powder
1 tbs tomato paste
2 medium chopped tomatoes
2 cups water
200 gms peeled and halved potatoes
2-4 green chilies
½ liter water
½ tsp garam masala powder
fresh coriander as needed

Grind black pepper corns, green cardamom, cumin seeds, caraway seeds, and fried onion until coarsely ground.

In a pot, heat oil and fry onions until translucent, then add bay leaves and fry until slightly golden.

Add mutton mix boti and fry for 5-10 minutes, then add ginger garlic paste.

Cover and cook for 4-5 minutes, then add red chili powder, salt, turmeric, and coriander powder and cook.

Add tomato paste and chopped tomatoes, cook for 5-8 minutes, then add water and bring to a boil.

Cover and cook on low flame until meat is tender and the water reduces, approximately 40-50 minutes.

Keep mixing, and once oil starts to separate, add potatoes, ground spice mix, and green chilies.

When oil separates fully, add water and let boil, then cover until potatoes are cooked.

Sprinkle with garam masala powder and fresh coriander.
