Combine softened butter, sugar, brown sugar, and ground cinnamon for the filling and set aside.
In a large bowl, mix half of the flour with sugar, yeast, and ground cardamom.
Pour in the milk and mix with a wooden spoon, then add salt and stir again.
Add one-third of the remaining flour and mix, then add softened butter and the second-third of the flour.
Knead the dough on a clean surface for about 15 minutes until smooth and elastic.
Roll out the dough into a 27 x 50-inch rectangle.
Spread the filling mixture evenly across the dough surface.
Fold the dough in half from the long side and roll gently with a rolling pin to remove big bubbles.
Slice the dough into 1/2 x 9-inch strips and swirl each strip around your fingers, tucking the end underneath.
Let the buns rise under a kitchen towel for about 2-3 hours.
While the buns are rising, make the simple syrup by boiling sugar and water until dissolved, then cool.
Preheat the oven to 390°F (200°C).
Brush the buns with egg wash and sprinkle with pearl sugar before baking.
Bake for about 15-17 minutes until golden brown.
Remove from oven, brush with simple syrup, and cool on a wire rack.
