Whisk milk, yeast, and sugar together.

Add egg, salt, cardamom, and flour to the mixture. Knead until smooth, then gradually add butter until incorporated. The dough should be soft, elastic, and not sticky.

Cover the dough and let it rest in a warm place until nearly doubled, about 45–60 minutes. Chill the dough in the fridge for 10–15 minutes before rolling.

Mix the filling ingredients (butter, sugar, and cinnamon) into a smooth paste.

Roll the dough out to a rectangle of approximately 30×40 cm and about 4–5 mm thick. Spread the filling evenly over the dough to the edges.

Roll the dough tightly from the long side into a log. Chill for 5–8 minutes, then cut into 12 slices using dental floss.

Shape each bun by tucking the loose end under and gently rounding them. Place on a tray with 6 buns per tray and proof for 30–40 minutes until puffy.

Brush the tops and sides of the buns lightly with the egg wash and sprinkle with pearl sugar if desired. Bake in a preheated oven until golden, about 8–12 minutes depending on oven type.

While the buns are hot, brush with syrup made from sugar and water for a soft shine.
