This dish reflects the traditional practice of pairing protein-rich curries with wholesome, nutritious breads. Today, it is enjoyed across India and has gained popularity among health-conscious eaters due to its gluten-free nature.

Greek yogurt is thicker and adds creaminess.
Heat 1/4 cup cooking oil in a pan over medium flame.
Add 1 kg chicken and 4 finely chopped medium onions to the pan.
Stir in 2 tablespoons ginger-garlic paste and keep the flame high.
Cook the chicken until it turns white in color.
Add 2 finely chopped medium tomatoes to the chicken.
Stir in 1 tablespoon cumin powder, 2 tablespoons coriander powder, 1/2 teaspoon turmeric powder, 1 tablespoon Kashmiri red chili powder, 1 tablespoon spicy red chili powder, and salt to taste.
Continue cooking on high flame for 2-3 minutes.
Cover the pan and let the chicken cook in its own juices on low flame for 15-20 minutes.
For jowar roti, boil 2 cups water with 1/2 teaspoon salt.
Once boiling, turn off the flame and add 2 cups jowar flour, mixing well.
Cover and let it sit for 10 minutes.
After 10 minutes, add 1/4 cup yogurt to the chicken and cook on high flame for 2-3 minutes.
Add 1/2 teaspoon dried fenugreek leaves, 1/2 teaspoon garam masala powder, 2 tablespoons fresh cream, and 1 tablespoon butter to the chicken, mixing well.
Garnish with chopped cilantro and turn off the flame.
Knead the jowar dough and make small balls for roti.
Roll out the dough into thin discs and cook on a hot skillet for 30-40 seconds on each side until puffed.
