Wash and peel the mango, then grind the pulp into a fine paste.
In a mixing bowl, add 1 cup all-purpose flour and 1/3 cup sugar.
Gradually add milk to achieve a thick batter consistency.
Add 1/4 cup refined oil and mix well.
Add 2 tablespoons of mango pulp and mix for 2-4 minutes until well combined.
Optional: Add food color to achieve a lighter color.
Add 1 teaspoon baking powder and 1/4 teaspoon baking soda, then mix well.
Prepare a baking tray with oil and baking paper, then pour the batter into it.
Bake in an OTG at 180°C for 30-35 minutes, checking after 25 minutes.
Once baked, let the cake cool down.
In a pan, heat 300 ml of milk and add 3 tablespoons of sugar, bringing it to a boil.
Mix 1 teaspoon of cornflour with a little milk and add it to the boiling milk to thicken slightly.
Optional: Add food color to the milk mixture for a better appearance.
Layer the cooled cake with the prepared milk mixture and mango pulp, and garnish with pistachios.
Refrigerate for 2-3 hours before serving.
