Originating from the southern Indian state of Kerala, banana chips are a beloved snack made from the Nendran variety of bananas. Traditionally served during festivals and special occasions, they are a crunchy delight that embodies the tropical flavors of the region. Today, they are popular not just in India but have also found a place in global snack culture, often enjoyed as a healthy alternative to potato chips.

Ingredients

  • green bananas
  • coconut oil
  • salt
  • turmeric powder
  • black pepper
  • curry leaves
  • asafoetida
  • chili powder

Instructions

  1. 1Peel the green bananas carefully and slice them thinly using a mandoline or sharp knife.
  2. 2Soak the banana slices in water with a pinch of turmeric for about 10 minutes to prevent browning.
  3. 3Heat coconut oil in a deep frying pan over medium heat until hot.
  4. 4Drain the banana slices and pat them dry with a clean kitchen towel.
  5. 5Fry the banana slices in batches, ensuring not to overcrowd the pan, until they turn golden and crispy, about 3-5 minutes.
  6. 6Remove the chips using a slotted spoon and drain excess oil on paper towels.
  7. 7Sprinkle salt, chili powder, and black pepper over the hot chips immediately after frying.
  8. 8Add curry leaves to the hot oil for a few seconds until crispy, then mix with the chips for added flavor.
  9. 9Allow the chips to cool completely before storing them in an airtight container.
