Instructions
- 1Peel the green bananas carefully and slice them thinly using a mandoline or sharp knife.
- 2Soak the banana slices in water with a pinch of turmeric for about 10 minutes to prevent browning.
- 3Heat coconut oil in a deep frying pan over medium heat until hot.
- 4Drain the banana slices and pat them dry with a clean kitchen towel.
- 5Fry the banana slices in batches, ensuring not to overcrowd the pan, until they turn golden and crispy, about 3-5 minutes.
- 6Remove the chips using a slotted spoon and drain excess oil on paper towels.
- 7Sprinkle salt, chili powder, and black pepper over the hot chips immediately after frying.
- 8Add curry leaves to the hot oil for a few seconds until crispy, then mix with the chips for added flavor.
- 9Allow the chips to cool completely before storing them in an airtight container.
