Soft Pretzels

Cultural Context

Soft pretzels are a popular snack in the United States, especially at fairs, sporting events, and street vendors. They have roots in German baking traditions, where pretzels were originally made as a symbol of good luck. The American version has evolved to include various toppings and flavors, making it a beloved treat across the country.

1

Measure 1.5 cups of warm water to be between 110 and 115°F using a thermometer.

2

Add 1 tablespoon of sugar and 1 teaspoon of kosher salt to the warm water and stir to dissolve.

3

Add 1 packet of yeast to the water mixture and let it sit for about 5 minutes to activate.

4

In a stand mixer fitted with a dough hook, combine the activated yeast mixture with 1/4 cup of melted butter and 4 cups of flour.

5

Turn the stand mixer on low to incorporate the ingredients, then increase to speed 4 or 5 to knead the dough for about 5 minutes until smooth and elastic.

6

Grease a mixing bowl liberally, place the dough in it, cover with a tea towel, and let it rise for about 1 hour until doubled in size.

7

After the dough has risen, divide it into 8 equal parts and roll each part into an 18 to 20-inch rope.

8

Shape each rope into a pretzel by bringing one end over and pinching it to the other side.

9

In a deep pot, bring 8 to 10 cups of water to a rolling boil and add 1/2 cup of baking soda.

10

Soak each pretzel in the boiling water for about 30 seconds before removing them.

11

Prepare an egg wash by mixing 1 egg yolk with 1-2 tablespoons of water.

12

Brush the egg wash over each pretzel and sprinkle with kosher salt.

13

Bake the pretzels in an oven preheated to 450°F for about 8 to 10 minutes, swapping baking sheets halfway through for even cooking.

14

Remove the pretzels when they are golden brown and let them cool for about 5 minutes before serving.
