Heat butter in a large pot over medium heat until melted.
Add chopped onions and sauté until translucent, about 5 minutes.
Dust the beef with flour and season with salt and black pepper.
Increase heat to medium-high and add beef to the pot, browning on all sides, about 5-7 minutes.
Pour in the beer, scraping up any browned bits from the bottom of the pot.
Add bay leaves, thyme, and mustard, stirring to combine.
Bring the mixture to a simmer, then reduce heat to low.
Cover and cook for 1.5 to 2 hours, until the beef is tender.
Stir occasionally and add water if needed to maintain liquid level.
Once cooked, remove bay leaves and stir in chopped parsley before serving.
