Peel and chop 12 small shallots finely.

Chop 1 large thumb-sized piece of ginger.

Add 7 small red peppers to the pan with a little oil and fry until a spice paste (boomoo) is formed.

In a separate pan, take 2 cups of the soup and reduce it to 1 cup, adding 1/2 cup sweet soy sauce and 1/4 cup raw cane sugar until it becomes a sticky syrup.

In another pan, heat peanut oil and fry 1 cup peanuts and 1/2 cup cashew nuts until toasty, then add half of the boomoo and blend into a paste, adding salt to taste.

Brush the peanut sauce onto the beef ribs before grilling.
