Finely dice half of a brown onion.
In a small pot on medium to high heat, add 3 tablespoons of olive oil and the diced onion; fry until softened and brown.
Add 500 grams of beef mince and cook until browned.
Stir in 1 teaspoon of salt and 0.5 teaspoon of black pepper.
Add 1 tablespoon of tomato paste and 1 tablespoon of Worcestershire sauce; mix and reduce heat to low to medium.
Add 1 cup of beef stock and 1 teaspoon of Vegemite; stir and simmer for about 10 minutes.
Add 3 tablespoons of plain flour to thicken the mixture; stir and simmer for another 5 minutes.
Turn off the heat and let the mixture cool completely.
Prepare shortcrust and puff pastry by bringing them to room temperature.
Lightly oil a muffin tray and use cookie cutters to cut pastry shapes for the base and tops.
Line the muffin tray with shortcrust pastry, pushing it into the base and sides.
Fill each pastry case about 80% full with the meat mixture.
Brush the edges of the pastry with an egg mixture made from 1 egg and 2 tablespoons of water.
Cover with puff pastry tops, pressing down to seal.
Lightly score the tops to allow steam to escape.
Preheat the oven to 220°C and bake for 25 to 30 minutes until golden brown.
Let the pies cool for 5 minutes before serving.
